Hi, I’m Alex! I’m a born Londoner with French, Italian, and Slovakian roots, and I’ve been living in the Colorado Rockies for more than twenty years. Food has always been a celebration in my family, and I cherish my childhood memories of helping my dad cook multi-course gourmet French meals, passing spaghetti and meatballs around the table on Friday nights, diving into family roast dinners on Sundays, and savoring perogies on Christmas Eve. Sharing food connects us, and in my family we have always cooked for those we love. To this day, I am happiest when I’m in the kitchen cooking or sharing a meal with friends and family.

When I began a rigorous training program to become a yoga instructor in 2009, I began to really notice my body for the first time. I’d spent decades of my life largely oblivious to the effects my choices had on my physical form, but the ancient and sacred movements of yoga put me deeply in touch with the connections between my mind, my body, and my spirit. Sensing these connections each and every day, I began to live a more embodied and heart-centered life.

I truly began to see the connections not just within us, but among us. Everything and everyone is connected, and in order to promote our well-being individually and collectively, we must prioritize these connections. My life has become a living and evolving dedication to helping connect people with themselves and with one another, and food remains at the center of my mission.

“I have always been interested in my health and wellness however as life progressed, I found I didn’t consistently dedicate time to these priorities.  I first met Alex in a yoga class and immediately found her to be a light that I wanted to have in my life.  For years I was able to attend yoga retreats with her and as life demanded more of my time my health focus shifted further back in the queue. One day a post from her account, A Rainbow a Day with Alex, popped up in my feed and I decided to commit to my longevity.  I scheduled nutritional counseling appointments with her and then added cooking classes.  Her guidance and knowledge have helped me to develop habits focusing on health, wellness, and finding joy in nutrition. She is a delight to work with and her food is positively phenomenal. If you are looking for a customized approach to effectively meet your wellness needs, look no further, Alex is absolutely the best.” C.Brinkman

I am a certified Nutrition Therapist Master from The Nutrition Therapy Institute as well as a Mayo Clinic Wellness Coach.

“The physical body is not only a temple for our soul, but the means by which we embark on the inward journey toward the core.” B.K.S. Iyengar

In 2018, I was diagnosed with Lynch Sydrome, a genetic condition that puts me at much higher risk for several types of cancer including uterine, ovarian, and colon cancer. Having lost my own mother to uterine cancer when I was 11 years old, I wanted to do everything within my power to stick around as long as possible for my own young daughter. I began to learn more about how the food I eat affects me on a physiological level, and this hunger for knowledge led me to become a Nutrition Therapist Master and Mayo Clinic Wellness Coach.

I still love food, and now I pay attention to how the food I eat makes me feel. I’ve learned which foods may help decrease my chances for disease, and now I create incredible and delicious meals that energize and support me. While I still eat (and love!) pasta, meat, and cheese, I have transitioned my diet to a largely plant based affair. My daughter is a picky eater, so I’m challenged every day to introduce foods into her diet that will help set her up for a lifetime of healthy eating.

Your journey undoubtedly looks different from mine, but I’ll bet we share the same desires to feel good in our bodies, savor the food we eat, nourish our connections, and have enough energy to truly enjoy the time we have with loved ones. My passion is sharing the knowledge I’ve gained with you - and to show you how accessible healthy eating can be! - through one-on-one coaching, plant-based cooking classes, and wellness retreats.  Let’s connect and help you create a personalized path to a happier and healthier life!
