radish fennel salad

A sweet tangy salad dressing combines perfectly with crisp radishes and fennel. If you aren’t familiar with fennel, then this salad is a great introduction. Uncooked fennel has a mild licorice flavor and a crisp texture. Slice the radishes and fennel as thin as possible to maximize flavor in every bite.

Ingredients

1 fennel bulb finely sliced

1 cup (200g) radishes, finely sliced

2 tablespoons apple cider vinegar

1 tablespoon olive oil

1 tablespoon lemon juice

1 tablespoon dried rosemary

Creating the Magic!

  1. Place the fennel and radishes in a large mixing bowl.

  2. Make the salad dressing by mixing the remaining ingredients in a bowl. Mix the dressing until combined.

  3. Pour the salad dressing over the radishes and fennel.

  4. Enjoy!
